Chocolate Chip Muesli Bars

Firstly... I’d just like to say that I have been buying Muesli Bars as a back up convenience food option on a regular basis. When you search to buy good quality processed foods without dairy, vegetable oil, refined sugars, wheat based thickeners and of course preservatives, it can become quite hard and quite expensive. 


Until yesterday I still bought them and when I ventured grocery shopping I looked at them and their price tag one last time. I decided enough was enough. I have been cutting a few corners lately and sneaking a few more of these types of things in and, quite frankly, I simply don’t want to throw my money away on products that I know cost next to nothing when I make them myself and of course homemade foods are always hands down better for my kids and the environment…Plus there are so many more fun things I can and would prefer to waste my money on!!

Secondly I just like to say OH MY GOD! I'm such an idiot, why I have I never before made a muesli bar!? These bars were mixed and in the oven within 5 minutes of me deciding to make some. 


They will definitely be making a regular appearance from now in the kid’s lunch boxes!

3 cups of roughly blitzed Rolled Oats. (or buy Quick Oats) 

1 cup of Shredded Coconut.
1 cup of Brown Rice Puffs.
1/2 cup of Almond Milk.
2 eggs.
3/4 cup of Coconut Sugar.
1 cup (dairy free) Dark Chocolate Chips.

Blitz rolled oats for a few seconds in your food processor.

Add the rest of your ingredients and stir until well combined and sticky enough to mould into a regular sized lined slice tray.
Bake until golden in a 180dg oven until toasty and brown. This took me around 20 minutes.

I have only made these once but can’t wait to play around with this recipe! I encourage you to too! Id love to hear about your variations, x Kell
