Basic Bolognese

1kg *lean beef mince.  

{You can substitute for lamb or chicken mince or for a vegan version add;
3 x tinned black beans (rinsed well) and
2 cups of dried red lentils}
2 large brown onions
2 cloves of garlic
4 carrots finely diced
2 red capsicum finely diced w seeds removed.
250g mushrooms finely chopped
1 tablespoon of sweet paprika 
3 tablespoons of dried Italian herbs
2 x quality organic tinned tomatoes (no sugar, juice or added salt)
1 cup of water

Start by frying in a small amount of coconut oil; onion, garlic and *protein of choice. Cook until onions are transparent and protein is browned. Add to this your dried herbs and cook together until well combined. Add chopped veggies and tinned tomatoes. Bring to the boil and add 1 cup of water. Cover and simmer until sauce has thickened and the flavours have developed. Season to taste and serve with zucchini noodles.


I strongly recommend adding handfuls of fresh chopped herbs before serving.
