This loaf is a permanent fixture in my fridge at home. This is one of my family's main breakfast options. I like my kids to eat eggs and veg each morning but on busier days this makes the 'go to'
I love it toasted with peanut butter on top at morning tea too!
Chai Spiced Banana Bread.
Into a food processor add;
2 teaspoons of ground cardamom.
2 teaspoons of ground cinnamon.
2 teaspoons of ground nutmeg.
2 teaspoons of ground cloves.
2 teaspoons of vanilla powder. Or extract.
8 medium sized over ripe bananas.
2 teaspoons of baking powder.
3 cups of Oats.
Blitz completely until mixture resembles a cake batter.
1 cup of sunflower seeds.
Blend gently to stir in seeds.
Place into 2 regular sized cake loaf tins to make breakfast bread.
Line tins with baking paper.
Bake in 180dg oven for 20 minutes. Remove from oven and place 1 slices banana on top of each. Place back into oven for another 20 minutes. Allow bread to cool 100% before taking out of tin. Store bread in fridge in a Tupperware container or freeze in separated portions.
