Chicken Skewer Satay Sauce

Some of you may already know I have a family of 6, I used to say “2 adults and four kids” However, now I am noticing it is more like a family of 5 adults and one child!  2 adults, 3 teenagers and one adorable 4 year old little Joey.

 

My recipes are (of course) bigger in portion sizes and you may choose to alter them, however Bulk Cooking is one the greatest habits to get yourself into when Clean Eating. Creating a fridge full of your own convenience foods processed at home by you.

 

This sauce will keep in your fridge for a week or two.

 

I started by searing off the outside of a couple of skewers before grilling them to coat the pan with the yummy natural chicken chicken flavour. (This step isn't essential)

 

I then add to this ;

 

2 whole finely diced onions

3 cloves of chopped garlic 

A good knob of grated ginger.

Cook until transparent.

 

Add to this;

 

3 tablespoons of crunchy organic Peanut Butter

3 tablespoons of tahini 

1/4 cup of tamari 

 

I then cook these ingredients until their natural nutty flavours richer and the paste darkens. 

 

I then add;

 

500mls of Homemade chicken stock.

 

Simmer on a low heat until the sauce thickens to your desired consistency and enjoy over your skewers. I use chicken thighs to make mine. I find them fuller in flavour, however you could use chicken breast.
