A simple, quick, fool proof and healthy recipe is one thing, when it is also affordable and the whole family loves it, then it becomes a very special thing. Since developing this recipe last year it has made a weekly appearance in my family's lunchbox and snack prep. It is so versatile too. Easily transformed using extra added ingredients and flavours!
Add what you like and have fun trying new things. My favourite is, as always, Banana and Walnut or Banana and Berry or Banana and Coconut...
...actually I don’t have a favourite, I love them all!
3 large over ripe Bananas (350g Banana)
3/4 cup of Quick Oats
1 teaspoon of Baking Powder
1/2 teaspoon of Cinnamon
1 teaspoon of Vanilla
Spoon equal amounts into a lined muffin tray. This will make 10-12 muffins. Add anything you like, like it says - Anything Goes!
Bake for 15 minutes in a 180 dg
