Crusted Salmon & Sweet Potato Patties
My whole family loves these! It’s very rare for there to be any left over in our house.. But, if and when I manage to save a few -they make great next day lunchbox food! Perfect cold or reheated.
1 kilo of pre-cooked sweet potato chunks. (Leave the skin on... this adds great texture, fibre and nutrients!)
2. Mash and add to this;
2 x 415g tins of Red Salmon. (Brine removed)
1 grated Zucchini.
1 finely diced Onion.
1 cup of chopped Coriander. (Or Parsley)
Juice of one Lemon.
3. Mix this together until well combined.
Step 4 is completely optional. I like to crust half and leave the other half uncrusted. This leaves an option for me to not use extra Fat and Grain serves in case I want to use them in other ways throughout the week. Try a bit of both though!! They're pretty yummy!)
1 cup of Oat Flour.
1/2 toasted Sesame Seeds.
Teaspoon of Sweet Paprika.
Pinch of Chilli Flakes.
5. I made 16 of these patties from this mix and lined a baking tray with parchment paper and baked at 200dg until golden.
