This recipe is a whole family favourite! My kids love this Mexican inspired dish and we often enjoy it accompanied by a help yourself style, mix and match table spread. My kids love this bean dish best used as the basis of a Vegetarian Nacho style meal. Oven baked corn chips are always the hero of our table spread, along with bowls of; smashed avocado with lime, Greek yoghurt, freshly chopped coriander, chopped tomato and cucumber, olives and fresh chili. Of course there are no rules as to what you can add to your Nacho inspired meal spread, mix and match what you enjoy and have available or eat this meal as a simple bean dish and serve on top of rice -the possibilities are delicious and endless!
2 large brown onions
3-4 cloves of garlic
1 large zucchini
2 large red capsicum
Stir fry these veggies together in a little olive oil in a hot lidded pan until soft and translucent.
4 tablespoons my very own Mexican Spice Mix and continue to stir fry.
Rinse and drain before adding;
4 tins of mixed beans
2 tins of diced tomatoes
Salt and Pepper
Continue to cook all ingredients until well combined.
Place lid on pan and simmer at a low heat for around 25 minutes.
