Breakfast Frittata

This is how I get through my busy mornings after boot camp. I know that Nathan from the team at Fit Stuff have all things strength and fitness covered for me but I also know how important my nutrition and food decisions are daily to receive positive outcomes and results! 

Last night I made this BREAKFAST FRITTATA and cut it into 5 serves to add to my freezer for next week's busy Bootcamp and work mornings. My teenage boys love it too! A great start to their school days on the run!

The recipe to this is simple!

For females: 2 eggs + 3 cups of veg per serve ( I use 1 cup baked sweet potato, 1 cup red capsicum and 1 cup zucchini) 

For males: 3 eggs + 3 cups of veg.

I simply times this recipe by 5 and know I have enough for my week.  10 eggs and 15 cups of veg! Males would do 15 eggs and 20 cups of veg.

Stir fry the veggies in pan until they're nice and tender. Add herbs and spices (I add a couple of table spoons of my own made pesto) Next add your whisked eggs and stir to combine. Pour into a lined baking dish. I like to use a loaf shaped tin. Bake for around 35-40 minutes at 180. Let cool in tin before you slice and individually wrap and freeze. Heat it up in the microwave or just eat cold. Yum!!
