Peanut Butter Balls.


If I was stuck on a deserted island with only one food option for the rest of my life these would be it! They make a regular appearance within my weekly staple food prep as the kids love them for snacks and they are so easy to throw into lunch boxes or into my mouth after a long training run!

1 cup of seeded medjool dates.

1 cup raw oats.

1 cup of natural peanut butter.

1 cup of shredded organic coconut.

1 teaspoon of vanilla extract.

1 pinch of Himalayan salt.

Blitz this together to form a mouldable crumb. Use tablespoon amounts to roll into balls. Refrigerate for at least 2 hours.

Eat!
