Creamy Bacon Pasta with Peas

I love to shop at Farmers Markets! Long Black in one hand, funky basket full of seasonal organic produce in the other… BUT! Then comes 'Reality Bites' Friday! Working all week leaves me with old Mother Hubbard's bare ass cupboards and without fail I'll do a 4 o'clock dash to the supermarket for quick and easy dinner food and more importantly quick and easy wine! This is something the whole family love and is both very easy and cheap to cook!



Salt and Pepper

3 tbsp Besan Flour (I like to stock this in my pantry) or a plain flour alternative

Almond Milk


Dried Basil (Fresh is best but I didn't have any when I made this last Friday)

3 cloves Garlic

1 Onion

FR Organic Bacon ( My Woolworth's sell Spring brook Valley Organic pork products in the cold section)

Frozen Peas

Ready made dried pasta (I used spelt but you can use any wholegrain pasta or alternative)


Cook and drain your pasta. Set aside.

Slice onion and garlic and fry in EVO oil with bacon for a few minutes until brown and starting to crisp.

Add Besan flour and cook for another couple of minutes until flour 'cooks out' and becomes crusty.

(Besan flour can only be found at health food stores. I strongly suggest you stock this in your pantry as it makes great gravies and sauces!)

At this stage while pan is still hot add almond milk as soon as bubbles start to form turn your pan to low.

Add dried basil and frozen peas. Simmer this for around 5 minutes until the peas are tender.

Add pasta and shaved *parmesan (*optional if you would like this to remain dairy free) and simmer again until hot, thick and creamy!

Add fresh herbs and more shaved parmesan… and of course wine!

You could replace bacon for chicken and peas for mushrooms…. Once you get the technique right you can play around with the core ingredients to suit what you have on hand.
